 NOODLES

-    1 kilo Raspberry puree
-    500 gm simple syrup
-    500 gm water
-    2 lime zest & juice
-    250m gm Agar-agar powder

 

  Bring everything to a boil (except the Agar) .

  Whisk in Agar .

  Cook for couple of minutes .

   Pour over a full size sheet pan lined with plastic wrap.

  Cut into 1/8"styrips .

  1 sheet pan yields 3 portions .

 PASSION FRUIT SAUCE

-    1 kg Passion puree

-    500 gm Water
-    300 gm Sugar

-     20 gm cornstarch

-    300 gm Butter

 

   Bring water and passion to a boil with the sugar .

   Add the cornstarch , mixed with a little water , and bring back to a boil .

   Pull off heat and whisk in butter .

 STREUSEL

-   450 gm Butter
-   400 gm Flour
-   450 gm Almond Flour
-   500 gm Butter

 

   Mix 3 first ingredient together by hand .

   Bake on a sheet pan until golden brown . Allow to cool .

   Crumble and add second amount of butter .

   Spread the mixture on a heet pan and flash in oven for a few minutes . allow to cool before using .

 To SERVE

   Mixed seasonal Berries with passion fruit seeds

   In a metal bowl put 1 portion of noodles in the oven and warm for 5 minutes at 350 degrees .

   Remove bowl from oven and dress with passion fruit sauce .

   Toss in berries then put noodles in a shallow bowl .

   Sprinkle with crumble and passion fruit seeds .
