- 600 grs whipped cream - ¼ cup of any Brandy

- 1 bottle Champagne
- 12 yolks + 1 egg
- 200 grs sugar

- 350 gm sugar (gros boule) - 450 gm mascarpone
- 80 gm sugar - 1 quart heavy cream - 16 egg whites - 150 gm sugar
