 LIME GREEN TEA

 3,750 kg Sugar
 4 1/2 liter Water
 6  Orange zest
 2 liters Lime juice
20 gm  Agar agar
 2  quart Green Apple Sorbet
 1/2 cup Matcha Green tea
 3  egg whites
 

Bring sugar (keep 100 gm to add the agar powder) and water to a boil infusing the orange zests.

  When the syrup is boiling, add the sugar / Agar mix . Whisk and let boil again.

  Let cool the mix completely.

  Finally add the lime juice, green Apple Sorbet, Matcha powder and egg whites.

 Strain and spin in ice cream maker right away.

 LEMON SHERBET

 1 pint water
 1.1 lb (450 gm) sugar
 3 gm Agar powder
 1 pint milk
 1 pint fresh lemon juice
 

Bring water and sugar mix with Agar to a boil.

Let cool and add lemon juice and milk.

Spin in ice cream maker.

 LEMONGRASS

 200 gm Sugar
 200 gm Water
 125 gm Lemongrass
   lemons , juiced
 125 ml Sparking water
 1  egg white
 Bring water, lemongrass and sugar to a boil then simmer for 10 minutes. Add lemon juice. Let cool. Strain and add sparkling water and egg white and turn.

 LEMON VERBENA

 200 grs sugar
 200 grs water
 1 bunch lemon verbena
 2  lemons , juiced
 1/8 liter  Pellegrino
 1  Egg white
 

Bring water and sugar to a boil

Add lemon verbena

Let cool, blend for 10 seconds and strain

Add Pellegrino, egg white and turn

 Combine and spin

 PEAR SORBET

 1,500 kg Cold Ripe Bartlett Pears
 2  juices of lemons
 3 oz good Pear Brandy
 to taste
 Sorbet Syrup
 

Cut pears in halves as well as using the trimming from other pears , skin off, and core them

Quarter them and toss them with the lemon juice

Juice them quick, add the syrup (to taste), The pearr Brandy (kept in frdge) and spin in ice cream maker

If made quick  and having the pears chilled the day before, the sorbet should show out clear golden brown.
