- 500 gm sugar
- 500gm 10X sugar
 
For large pieces such as "Fonds " for Vacherins or large Shells
Bake for 2 to 3 hours at 210F(100C)
Should be light and crumbly
 
FLOATING ISLAND
- 600 grs egg whites
- 550 grs sugar
- vanilla
- lemon juice
 
Obtain 12 cups .
Bake in bain-marie in oven at 350ºF
  for 7 to 10 mn

CHOCOLATE
- 750 grs egg whites
- 700 grs sugar
- 1 ½ Lbs 10 X
- 1 ½ cup cocoa powder
 
Bake at 210ºF for 30 to 35 min
