 COCONUT CHOCOLATE CHIPS COOKIES

 

____Yield : 45 pieces____

 

- 3 cups ( 470 gm) All purpose flour

- 1 tbsp Baking Powder

- 1 tbsp Baking Soda

- 1 tbsp ground Cinnamon

- 1 tsp salt

- 1 1/2 cups (3 sticks) (300 gm) Butter, At room temp.

- 1 1/2 cups (330 gm) granulated sugar

- 1 1/2 cupc (225 gm) packed light brown Sugar

- 3 eggs

- 1 tbsp vanilla

- 3 cups (410 gm) semi-sweet Chocolate Chips

- 3 cups (230 gm) old fashioned rolled Oats

- 2 cups (100 gm) sweetened flake Coconut

- 2 cups chopped Pecan (8 onces)

 

_1_ Heat oven to 350 degrees F

_2_ Mix flour , Baking powder and soda , cinnamon and salt in bowl

_3_ In a very large bowl, beat butter with an electric mixer at medium speed until smooth and creamy . Gradually beat in sugar , and combine thoroughly.

_4_ Add eggs one at the a time , beating after each . Beat in vanilla

_5_Stir in flour mixture until just combined . Stir in chocolate chips , oats , and pecans

_6_ For each cookie , drop 1/4 cup dough onto ungreased baking sheets, spacing 3 inches apart.

_7_ Bake for 15 to 17 minutes, until edges are lightly browned ; rotate sheets halfway through.

       Remove cookies from rack to cool.

       Yield :3 to 3 1/2 dozen cookies

 

 

 

 SIMPLE CHOCOLATE CHIPS (Mercer)

- 450 gm Butter

- 500 gm Brown Sugar

- 420 gm Sugar

- 4 Eggs

- 2 tsp Vanilla

- 750 gm AP Flour

- 2 tsp Salt

- 2 tsp Baking Soda

- 260 gm Toasted Pecans

- 670 gm Chocolate Chips
 

- Lightly whip butter and both sugar with paddle

-Add eggs and vanilla

- Sift ingredients and add with paddle

- Add pecans and chips.

- Roll into logs in parchment.

- Slice 1/4 " thick and bake at 325 F for 8 to 10 minutes.

 

 DOUBLE CHOCOLATE

  • 5500 gm Sugar

  • 10 gm vanilla extract

  • 10 gm Trablit coffee extract

  • 1350 gm AP flour

  • 30 gm Baking powder

  • 60 gm Salt

Bake at 350 f for 15 minutes

 


 FUDGE COOKIES

 - 370gm Manjari 64 % Chocolate

- 170 gm Chocolate 100%

- 90 gm Butter

- 6 eggs

- 480 gm Sugar

- 1 tsp Vanilla Extract

- 1 tbsp Trablit Coffee Extract

- 110 gm Flour

- 1 tsp Baking Powder

- 1 tsp Salt

- 2 cup (270gm) Chocolate Chips 

- Melt Manjari and 100% chocolate with butter and keep hot

- whip sugar, eggs , vanilla and trablit for 15 minutes until very thick.

- Gently fold chocolate into egg mixture.

- Sift the flour, baking powder and salt while folding in 3 additions.

- When the last addition of flour is added, add chips and fold together

- Pipe and bake immediately at 310 F for 5 minutes.

- Rotate and bake 3 more minutes.
