MADELEINES    
         - 20 Eggs     - 800 gm Sugar     - 300 milk     - 500 gm Butter (melted)     - 1 lg AP Flour (sifted with    
         - 20m gm Baking Powder       –Whisk eggs to ribbon stage and add sugar    –Add milk and butter   
         -Mix baking powder into flour      –
         Fold dry into wet    *For  pistachio and praline flavors, divide batter into two bowls   of 1K 800g  of batter    and add 200 gm of praline paste to one bowl    and 200 gm of pistachio pase to  the other.    Mix to incorporate.     |
