STARCH IN ICE CREAM

 RICE ICE CREAM

- 1 qt Milk

- 600 gm Jasmine rice

- 50 gm Sugar  _____________________

 ICE CREAM BASE

- 2 1/2 qt Half & Half

- 100 gm light corn syrup

- 1 1/3 can condensed milk

- 200 gm sugar

- 3 gm Agar Powder

_ Put milk in pot on stove, flame on.

- Quickly wash the rice under running water in a strainer, and let exceeding water drip out.

- Add the sugar and the rice to the by now boiling milk, turn down the flame and let simmer for 10 minutes

Bring half & half to the boil

Add corn syrup and condensed milk, wait again for the boil and add the sugar and Agar combine, 

Whisk constantly while reaching the boiling point again.

Remove from stove and add the mixture milk /rice.

Let infuse for another 10 min and finally strain.

Let completely cool down before spinning in ice cream maker.
